Measuring 72⁵⁄₁₆ inches wide by 35¹⁄₁₆ inches deep, the True TSSU-72-18M-B-HC food prep table is ideal for high-volume salad and sandwich operations. It comes with 18 sixth-size, 4-inch-deep pans in its rail compartment but can also hold 6-inch-deep pans, which are sold separately. Because a foam-insulated hood and lid cover the pans, cold air stays around the products to maintain freshness. To create a sturdy prep station, a removable cutting board spans across the front, measuring 8⁷⁄₈ inches deep by ¹⁄₂ inches thick.

This True TSSU-72-18M-B-HC mega-top prep table has a clear-coated aluminum interior liner that resists corrosion and withstands heavy use. Coated to resist rust, the shelves are adjustable in ¹⁄₂-inch increments to accommodate different items. Because its evaporator is epoxy coated, the potential for corrosion is minimized, and high-density polyurethane insulation is foamed in place throughout the cabinet and in the solid doors, retaining cold air to maintain the set temperature. Its foam-insulated, removable lid and hood assembly are constructed of stainless steel and keep pan temperatures cold, lock freshness in, and reduce condensation. For efficient operation and reduced energy use, the compressor fan automatically cleans dust off the condenser unit by reversing for 20 seconds upon start up.
